Tomato Quiche Recipe

2 1/4 cups flour
salt to taste
1/4 cup sour cream
10 tbsp butter

Filling:
5 large tomatoes
10 tbsp butter
6 oz cheese swiss or provolone
8 thin slices of french bread
1/2 cup sour cream
4 eggs
salt
grated nutmeg
1/2 tsp paprika
2 tbsp butter

Sift flour and salt into bowl. Add sour cream, dot with butter pieces and knead lightly
until smooth. Chill for 30 minutes.
Thinly slice tomatoes. Slice cheese and cut crusts off bread

Preheat oven to 400 degrees.
Roll out dough and use to line 12 inch quiche pan. Cover with layer of sliced tomatoes. then cheese and bread.
Beat heavy cream with sour cream, eggs, a pinch each of salt and nutmeg, and paprika.
Pour into pastry case and dot top with butter.
Bake for 30-40 minutes until firm and golden. Garnish with parsley if desired.
Serve hot.
