How to Make Sweet Potato Pie

1 pound sweet potatoes or 1- 18 ounce can sweet potatoes

1/4 cup packed brown sugar

1 teaspoon ground cinnamon

1/2 teaspoon salt

3 eggs

1 3/4 cups milk

1 tablespoon butter

1 unbaked 9-inch pie shell (homemade or store bought)


Cook fresh potatoes, covered, in boiling water till tender, about 30 minutes.

Peel and mash. ( Or, drain and mash canned potatoes. )  Measure 1 1/2 .  Combine potatoes, sugar, cinnamon and salt.  Beat eggs slightly with for.  Stir eggs, milk, and butter into potato mixture.  Spoon into pastry shell.  Bake at 400 degrees till knife inserted just of center comes out clean, 45 to 50 minutes.
