Scalloped Potatoes Recipe


6 to 8 medium potatoes

1/4 cup finely chopped onion

1/3 all-purpose flour

1/2 teaspoon salt

1/2 teaspoon ground pepper

2 cups milk

Peel potatoes.  Thinly slice potatoes; measure 6 cups.  Place half of the potatoes in a greased 2 quart casserole.  Add half the onion.  Sift half the flour over potatoes and onions in casserole; sprinkle half the salt and pepper.  Repeat layers.  Pour the 2 cups of milk over potatoes, onions and seasonings.

Cover and bake in a 350 degrees oven for 1 1/4 hours.  Uncover and continue baking 15 to 30 minutes longer or till potatoes are done.  Makes 6 servings.  Garnish with crisp bacon bits if desired.
*I use a sifter to evenly distribute the flour over the potatoes and onions:
