Outback Coconut Shrimp Recipe – with Orange Marmalade Dip

How to Make coconut Shrimp

8 ounces flat beer
1 cup self-rising flour
2 cups sweetened flaked coconut, divided (one 7-ounce package)
2 tablespoons sugar
1/2 teaspoon salt
12 jumbo shrimp
Peanut oil

Devein Shrimp and peel off shell back to the tail
Leave tail on.

BATTER:
Combine ingredients for batter; beer, flour, 1 cup of the coconut flakes, sugar and salt in bowl. MIX all with mixer.  refrigerate for one hour.  When ready dry off shrimp, dip in batter and left over coconut flakes;  Coat one shrimp at a time. 

Dip shrimp in enough oil to cover:

Marmalade Dipping Sauce
1/2 cup orange marmalade
1/2 teaspoon red pepper flakes
1 dash salt
Heat thru in small saucepan>
