Old Fashioned Pumpkin Pie with Caramelized Almonds Recipe
2 eggs, slightly beaten
1 can (16 oz Libby’s) solid Pack Pumpkin
1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon ginger
!/4 cup sugar
1 1/2 cups evaporated milk or light cream
1 unbaked 9-inch pastry shell
Combine eggs and pumpkin. Mix sugar with salt and spices and add to pumpkin mixture. Blend in milk or light cream. Pour into Pastry Shell.
Bake in hot oven 425 degrees for 15 minutes. Reduce heat to 350 degrees for 45 minutes, or knife inserted in middle comes out clean. Cool Pie, then circle top with sweetened whipped cream flavoured with almond extract. Sprinkle cream with caramelized almonds.
*Combine 1 cup of slivered almonds and 1 cup sugar in pan cook until sugar is melted and almonds are a carmel color. Break apart when cool
