Mushroom-Stuffed Chicken Breasts Recipe


1/4 pound + 4 tablespoons butter
1 1/2 cup seasoned bread crumbs (I use Panko)
1/2 pound fresh mushrooms, chopped
1/4 teaspoon freshly ground pepper
2 cloves of garlic minced-
4 skinless chicken breasts
1 cup heavy cream

Preheat oven to 350 degrees. Melt the butter in a skillet. Add the garlic, mushrooms, salt and pepper, and cook stirring often until mushrooms turn dark and absorb all the butter. Remove from heat and stir in 1/4 cup of the bread crumbs. Divide the mushroom stuffing into 8 portions and place a portio in the center of each piece of chicken. Fold chicken around stuffing, and place seam side down, in a shallow casserole. Melt the remaining 4 tablespoon butter and brush over chicken. Sprinkle with the remaining 1/4 cup of bread crumbs. Pour on the cream and bake for 30 minutes until lightly brown.
