Mom’s Artichokes Parmesan Recipe
How to Make Mom’s Artichokes Parmesan
Wash 8 small artichokes. Cut off 1 inch of the top, the stem and tips of leaves. Remove choke and any loose outer leaves.
Brush cut edges with lemon juice. Cook 1 tablespoon sliced green onion with tops and 1 clove garlic, minced, in 3 tablespoon butter till tender
Combine 1 1/2 cups soft bread crumbs, 1/4 cup Parmesan cheese, and 2 tablespoons snipped parsley. Add onion mixture; mix lightly. Spoon into artichokes. Place in large saucepan, making sure artichokes won’t tip over. Add water to saucepan to depth of 1 inch. Bring to boil; reduce heat. Cover tightly; simmer about 30 minutes. Add additional water as necessary.
