Lemon Cookie Recipe!
1 cup butter softened
1/2 cup sifted powdered sugar
2/3 finely shredded lemon peel
1/2 teaspoon freshly squeezed lemon juice
1 teaspoon vanilla
2 1/2 cups unbleached flour
3/4 cup finely chopped pecans
Lemon Glaze to follow
In mixer bowl cream the butter, sugar and vanilla. Add lemon peel and juice.
Stir in flour, mixing well. Using rounded teaspoon shape dough into balls; dip
one side in chopped nuts. Place nut side up on parchment paper covered cookie sheet.
Flatten dough with bottom of a glass. Bake in 350 degrees oven for 20 to 25 minutes.
Cool drizzle with Lemon Glaze.
Lemon Glaze: Combine 1 cup sifted powdered sugar and 4 teaspoons fresh lemon juice to make glaze
drizzle on cookies.
