Italian Minestrone Soup with Parmesan Recipe

1 cup Dried navy  bean

10 cups water

1 cup chopped carrots

2 cups shredded cabbage

1 cup frozen peas thawed

1 8- ounce can tomatoes

4 ounces fine noodles (or homemade found under recipes)

1 teaspoon salt

1 teaspoon dry basil, crushed

1/4 to 1/2 cup light cream

3 tablespoons cooking oil (olive)

1/4 cup grated parmesan cheese

3 tablespoons cooking oil

2 tablespoons chopped parsley

2 cloves garlic, minced

 

RINSE beans.  Combine beans water; simmer 2 minutes.  Remove from heat;  cover and let stand 1 hour. (Or, combine beans and water; let stand overnight.)

Do not drain.  Add carrots; simmer, covered, 2 1/2 to 3 hours.  Add cabbage, peas, tomatoes, noodles, salt, and basil.  Simmer till noodles are done, 20 to 25 minutes.  Add remaining ingredients.

I top it off when done with extra parmesan cheese, and  garlic bread on the side.
