Homemade Puffy Noodles Recipe
How to make Puffy Homemade Noodles

 

 

Mix 1 beaten egg and 1 tablespoon milk.  Stir together 3/4 cups all-purpose flour (unbleached), 1 teaspoon baking powder, and dash salt.  Stir into milk mixture to make a stiff dough  Roll to a 12 x 12-inch square on lightly floured surface.  Roll up; slice into 1/4-inch wide strips.  Unroll.

Cut strips into desired lengths.  To cook noodles, drop into chicken broth or boiling salted water.  Cook, uncovered, 10 to 12 minutes.

Makes 2 1/2 cups cooked noodles.
