Home Made Chicken Pot Pie
1 3/4 cups all purpose flour
1 Tablespoon baking powder
1/2 teaspoon salt
1 teaspoon sugar
1/2 cup (1 stick) butter, cut into small cubes
1 cup heavy cream
2 Tablespoons butter, melted
1/2 cup cheddar cheese, grated
In a large mixing bowl, combine flour, baking powder, sale and sugar. Stir until well combined.
Cut the butter into the flour mixture using a pastry cutter or two knives. Continue cutting until the dough forms a course meal consistency.
Fold in the cream and mix until just combined. Be careful not to over mix.
Form the dough into a ball and cover with plastic wrap.
Set dough aside until ready to use.
When ready to use,
Preheat your oven to 375ºF.
Unwrap the dough and gently pat or roll it into a rectangle.
Cut the dough into long strips. You can then arrange them on top of your filling.
Paint the top of the dough with the melted butter, using a pastry brush.
Transfer the pot pie to the preheated oven. Bake until biscuits are nice and brown, about 25 minutes.
Remove from oven and sprinkle top with cheddar cheese.
Transfer the pot pie back to the oven and bake for another 15 minutes.
