Frozen Pineapple Mousse Recipe
How to make Frozen Pineapple Mousse
1 envelope gelatin
1/2 cup sugar
Pinch of salt
2 tablespoons freshly squeezed lemon juice
2 cups heavy cream
Put the pineapple syrup in a heavy-bottomed pan; sprinkle the gelatin over it and let it soften for 5 minutes. Add the sugar and salt and cook over low heat, stirring, until the sugar and gelatin dissolve. Remove from the heat and add the lemon juice. Chill until thick but not set. then beat until light. Whip the heavy cream and fold into the pineapple mixture. spoon into a mold and freeze. Can serve over coconut flakes.
