Eggplant Parmesan Recipe
Delicious and easy to make:
1 eggplant about 1 1/2 pounds
2 tablespoons butter
1 small onion, chopped fine
1 tablespoon chopped parsley
pinch of salt
ground pepper
Buttered italian bread crumbs
Parmesan cheese
Preheat oven to 375 degrees. Peel the eggplant and cut it into 1/2 inch cubes. Put the eggplant in a pot with an inch of boiling water cover and cook gently until tender, about 5-10 minutes. Drain. Melt the butter in a skillet, add the onion, and cook over low heat until soft but not brown
Stir in the eggplant and parsley, season with salt and pepper, and combine gently. Spoon into a buttered baking dish. Cover with bread crumbs and 1/2 cup parmesan cheese, and bake until eggplant is heated through and the crumbs are brown.
