Chicken Croquettes Recipe
1-1/2 cups coarsely chopped chicken
1/4 cup onion finely chopped
3 tablespoons butter
1/4 cup all-purpose flour
1/2 cup chicken broth
1/2 cup milk
2 tablespoons snipped parsley
1 teaspoon fresh lemon juice
1/2 teaspoon paprika
1/2 teaspoon black ground peppercorns
1 cup Italian bread crumbs
2 eggs beaten
Olive oil for deep-fat frying
How to Prepare:
In medium size saucepan make a white sauce: Melt the butter, add milk, chicken broth stir until mixture is bubbly and thick. Remove from heat.
Stir in parsley, lemon juice, salt, pepper, paprika add the chicken mixture. Mix well, cover and chill thoroughly.
With wet hands shape a scant 1/4 cup of chopped chicken into a roll. Repeat with remaining mixture to form about 8 rolls.
Mix beaten eggs in a shallow dish. Dip each roll into egg mixture; roll again in bread crumbs.
Fry 2 to 3 croquettes in deep fryer at 365 degrees for about 2 to 3 minutes or till golden. Drain on paper towel. Keep croquettes hot in a warm oven while frying remaining.
Makes 4 servings. Serve with mashed potatoes.
