How to Make Chicken Cacciatore with Wine Recipe
1 cup fresh mushrooms
4 tablespoons olive oil
1 medium chicken, cut in 8 pieces
1 large onion, chopped
1/2 cup dry white wine
2 cloves garlic, minced ( save (1/2 clove garlic for garnish)
1 tablespoon tomato paste
2 cups fresh tomatoes peeled, seeded, and chopped
1/2 teaspoon allspice
Freshly ground pepper
2 bay leaves
salt to taste
1 teaspoon dried oregano
Grated rind of 1 lemon
3 tablespoons minced parsley
Heat the oil in a large skillet and cook the chicken until lightly browned on all sides. Add the onion and saute a minute or two, then splash in the wine let it boil up. Lower heat and add the garlic, paste, and tomatoes, the mushrooms, add the seasonings. Cover and cook slowly for about 40 minutes, or until done. Remove bay leaves, taste and correct the salt. Mix together the lemon rind, minced garlic, and parsley and scatter over top.
Serve with Noodles or Rice
