Cheese Souffle Recipe
6 tablespoons butter
1/2 cup cornstarch
2 1/2 cups milk
salt and pepper
1 cup sharp cheddar cheese
Preheat oven to 400 degrees
Grease a 7 inch souffle dish with 1 tbsp of the butter. Separate the eggs.
Melt the remaining butter in pan stir in cornstarch and cook for 1 minute.
Gradually add the milk, and bring to a boil, stirring all the time until the sauce thickens. Season with salt and pepper and a pinch of ground nutmeg. Take pan off heat and allow mixture to cool slightly.
Stir the cheese into sauce. Add egg yolks one at a time to the sauce, beating well after each addition.
In a large bowl, beat egg whites till they hold stiff peaks, then carefully fold into sauce with a metal spoon. Pour souffle mixture into prepared dish. Bake for about 25 minutes or until risen and golden brown. Remove from oven and serve immediately.
