Blueberry Cobbler

2 ½ C fresh or frozen blueberries
1 C sugar
1 t vanilla extract
½ lemon juiced
½ t all-purpose flour
1 T butter melted

1 ¾ C all-purpose flour
4 t baking powder
6 T sugar
5 t butter
1 C milk

2 t sugar
pinch of ground cinnamon.

Lightly grease an 8 inch square baking dish. In a bowl place blueberries, vanilla, lemon juice, 1 C sugar, ½ t flour and mix with 1 T melted butter. Pour into baking dish.

In a medium bowl mix 1¾ C flour, baking powder and 6 T sugar. Cut into the flour 5 T chilled butter until it resembles coarse meal the size of peas. Make a well in the middle and add 1 C milk. Fold it in quickly; don’t over-mix. Let rest for 10 minutes.

Preheat oven to 375 degrees. Spoon batter over blueberries. Mix cinnamon and 2 t sugar together and sprinkle over the top. Bake for 20 to 25 minutes or until a knife inserted in the top comes out clean.

Serve with ice cream or fresh whipped cream or both.

Yields 4 servings
