Moms Beef Stroganoff w Gravy
6 tablespoons olive oil or butter
1 small onion sliced thin
2 cloves garlic minced
1/4 cup all-purpose flour
2 lbs sirloin cut into strips
1 cup mushrooms sliced wash and drained
salt and pepper to taste
1/4 cup beef broth
Heat 2 tablespoons of oil in large skillet. Add onion cook slowly till transparent, add minced garlic when onion is almost done.
While onion and garlic are cooking cut meat into thin strips lightly flour each strip.
Remove onion and garlic when done from skillet; add 2 more tablespoons oil turn up heat to medium stir in mushrooms and cover for about 3 minutes; remove mushrooms set aside with onions and garlic; add last tablespoons oil to skillet; add beef and brown slowly and briefly on both sides; after beef has browned remove and set aside; slowly add broth to skillet stirring constantly to make a gravy from drippings in skillet add a little more flour if needed to to thicken to make gravy; whisk the sour cream add to the skillet do not allow it to boil. Return beef, onions, garlic, mushrooms to mixture simmer for about 5 minutes for all ingredients to heat through.

Serve over noodles
